Buttermilk Lavender Berry Cakes

Ingredients
  

  • 2 large eggs
  • ½ cup buttermilk
  • ½ cup BUTTER OLIVE OIL
  • 1 tablespoon MTOO Lavender Balsamic Vinegar
  • 1 cup granulated sugar
  • 1 ½ cups plus 1 tablespoon all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 9 oz 2 clamshells fresh berries
  • 2 tablespoons turbinado sugar

Instructions
 

  • Heat oven to 350֯. Grease a 9” round cake pan and line with parchment.
  • In a medium bowl, whisk together the dry ingredients (not including the sugar). In a separate bowl whisk together the wet ingredients (eggs, buttermilk, butter olive oil, lavender balsamic and granulated sugar). Mix the wet ingredients into the dry until just combined. Don’t overmix. Toss the berries in a little bit of flour and fold them gently into the batter. Transfer to the prepared baking dish and sprinkle with the turbinado sugar.
  • Bake in the preheated oven until a toothpick inserted in the middle comes out clean and the top is golden brown, about 1 hour. Remove to a wire rack and let cool for 10 minutes before removing from pan and serving.
