This bright salad will whet any appetite.
Avocado & Pineapple Salad
- 1/4 cup MTOO Persian Lime Olive Oil
- 1/4 cup MTOO Gravenstein Apple Balsamic Vinegar
- 1/4 cup fresh orange juice
- 1 tablespoon sugar
- 4 cups romaine or iceberg lettuce shredded
- 1 cup fresh pineapple cubed
- 1/4 cup red onion thinly sliced
- 1 avocado peeled and sliced into cubes
- 1 fresh lime cut into wedges
- Combine oil, vinegar, orange juice and sugar and whisk until well combined. Season with salt and pepper. Toss together lettuce, pineapple, red onion and oil/vinegar mixture. Garnish with avocado slices and lime wedges.
