Summer Gazpacho Soup


The heat of summer — no one wants to cook. Just add all the ingredients together and let them meld their bright flavors together. Add a crusty loaf of bread and you have the perfect healthy meal everyone will love.



  • 1 each 28oz can of tomatoes
  • 1 pint spicy canned tomatoes
  • 1 cup water add if too thick for desired consistancy
  • 2 each tomatoes diced
  • 2 each cucmbers peeled and diced
  • 1 bunch green onions chopped
  • 1 each Anaheim chili diced and deseede
  • 1 each yellow bell pepper diced
  • 1 each red bell pepper diced
  • 1/2 each red onion diced
  • 1 each green apple peeled and diced
  • 1 each lime squeezed
  • 1/4 cup cilantro chopped
  • 1/8 cup MTOO Basil Olive Oil
  • 1/8 cup MTOO Persian Lime Olive Oil
  • 1 tbls MTOO Baklouti Green Chile Olive Oil
  • 1/4 cup MTOO Sicilian Lemon Balsamic Vinegar


  • Mix all ingredients together and add water to desired consistency. Salt and Pepper to taste.
